“My contemporary cuisine looks to the future, but never forgets its origins,” says chef Andrea.

No other dish best illustrates than his Caprese Sweet Salty, in which he presents all of the traditional Caprese flavors but recreated with surprising and innovative textures. “My goal was to rebuild the Caprese with all the flavors still there,” he says.
