To kick off our Copenhagen Destination Series, we went to Copenhagen to visit one of its’ most sought out restaurants, the 2 Michelin-starred Geranium. From growing up primarily as a young vegetarian boy in the forest to spearheading one of the world’s must see destinations, Rasmus Kofoed has created a restaurant that is a clear reflection of himself and the environment he grew up in.
“The forest inspires me a lot as a human being and as a chef. I did not think about it at that time, but when you’re getting older and you’re searching for inspiration, childhood is a good place to find inspiration,” he says.
